Chocolate Mint Protein Brownies (Vegan)

I don't know about you, but I'm a huge chocolate mint fan! These vegan Chocolate Mint Protein Brownies combine rich fudge brownies with mint chunks and mint cream frosting. They're simply divine. Oh and you'll love this... each brownie is just over 100 calories with 7 grams of protein, flourless, and gluten-free!

Protein recommendations

I used LIV Body Lean Vegan Protein in their new Chocolate flavor for these brownies. I love that there are no artificial ingredients! Their new formula actually only has a few ingredients: pea protein, alkalized cocoa powder, natural flavor, salt, Reb M (from fermented sugarcane), and iron chelate. I haven't tested these with other vegan protein powders, but it should work just fine (you may need to adjust the amount of water or baking time). Casein is more similar to vegan protein than whey (proceed at your own risk!), but collagen is much too different to be substituted.

Sweetener recommendations

You can use any sweetener that measures like sugar in these brownies. I really like this monk fruit allulose blend, but you can use any monk fruit blend, granulated erythritol, baking stevia, or coconut sugar (will add more calories and sugar). You can also use stevia drops or more concentrated sweeteners, just make sure to adjust the amount.

Other brownie ingredients

Besides the protein and sweetener, you will also need dark cocoa powder (Dutch or black), baking soda, almond butter, dairy free yogurt, unsweetened applesauce, and pure vanilla extract. Feel free to add some dairy free mint chips, too!

For the dairy free yogurt, look for one that's thick with a little protein, and is lower in fat and sugar. You can substitute mashed banana for the yogurt and applesauce. You can also swap the almond butter for cashew butter or sunflower seed butter if you prefer. The baking soda, vanilla, and mint chips are all optional but improve the flavor :)

Mint cream frosting

The mint cream frosting only has four ingredients: powdered sweetener, dairy free cream cheese, natural green food coloring, and pure peppermint extract. You only need one or two tiny drops of coloring and extract each! The best cream cheese brands I've found are Kite Hill, Simple Truth, and Tofutti. Be sure to use a sweetener that measures like sugar here!

I’ve made these Protein Breakfast Cookies so many times! They’re irresistibly delicious, super easy, and have awesome macros. Not to mention, these cookies are a great way to use up spotty bananas! The kids love them too, which is sad for me because each “Mommy can I have a cookie?” means one less cookie for mama. Oh well, at least I know they’re eating something healthy!
