Banana Nut Collagen Protein Muffins (Gluten Free)

Muffins are always a good idea for breakfast – especially if they’re these Banana Collagen Protein Muffins 😉 These muffins are low sugar, high protein, and taste like banana heaven! I had to eat as many as I could before the hubby got them all (he was pretty mad about it too). You can make these muffins low fat using unsweetened applesauce, OR with almond butter and walnuts for a more decadent version. Use cassava flour for a Paleo version!

Collagen substitutions

If you don’t have collagen, you can substitute an additional six tablespoons (45g) of all-purpose flour, gluten free baking flour or cassava flour for Paleo. If you're experimenting with whey, casein, or another protein powder, I would suggest starting with no more than 45 grams of protein powder. You simply can’t use as much of other protein powders (without other modifications) and achieve the same texture. That’s the “beauty” of collagen!

Flour substitutions

I used a combination of gluten-free baking flour and coconut flour to reduce to carb content. Feel free to sub out the coconut flour for twice as much (half a cup) gluten-free baking flour if preferred. You can also use regular all-purpose flour, gluten-free oat flour, sweet white sorghum flour, white whole wheat flour, or cassava flour (Paleo). I cannot guarantee the result if using only almond flour, only coconut flour, or trying other flours beyond what I've listed.

Sweetener substitutions

To add sweetness to these Banana Collagen Protein Muffins, I used my favorite granulated sweetener that's sugar free with no stevia or erythritol. You can also use granulated erythritol, baking stevia, or any granulated sugar like coconut sugar. If using maple syrup or honey, you will need to add more flour to counter the added liquid. If using stevia extract or drops, please refer to the brand-specific conversion chart.

Other substitutions

Instead of whole eggs, I used cartoned egg whites, but you can also *try* a vegan egg replacer or one quarter cup of ground flaxseed with half a cup of warm water (I haven't tested this). I love the richness the almond butter adds, but feel free to substitute avocado oil, melted coconut oil , unsweetened applesauce, or vegan butter in its place. You can even leave it out altogether as I have done before! The vanilla extract and cinnamon are optional but really enhance the richness of these muffins.

I’ve made these Protein Breakfast Cookies so many times! They’re irresistibly delicious, super easy, and have awesome macros. Not to mention, these cookies are a great way to use up spotty bananas! The kids love them too, which is sad for me because each “Mommy can I have a cookie?” means one less cookie for mama. Oh well, at least I know they’re eating something healthy!
